For the record, I used to hate beets. Hate. I mean that. Then I married Nick and started liking foods I had formally hated. Love can do weird things to you. I highly recommend it. And beets.
Ingredients (for 2 people):
3 small beets** (see note below) diced into 1/4 inch cubes
1/2 bag mache lettuce
3 ounces Havarti cheese cut into small cubes (more if you like!)
2 tbsp finely sliced red onion
3-4 leaves basil sliced right before you throw it into the salad (you can omit this if you don’t have it)
2 English cucumbers washed well and diced into 1/4 inch cubes
S&P
Dressing:
2 tbsp olive oil
2 tbsp rice wine vinegar
(more of both if you like your salads on the wetter side)
If you like salad, and you’ve never eaten mache lettuce, I’m sure you’ll enjoy it. It has a very light, lovely flavor. This salad is also great without any lettuce, just more beets, cucumber and havarti. However, if you are in love with a certain leaf, buy it. Arugula, frisee, boston lettuce, and spinach would all go nicely as substitutes.
**I’d like to do a product shout out here. I LOVE Trader Joe’s beets. I have included a photo above, as these puppies are perfect. If you’re a beet connoisseur you’ll see what I mean. You’ll never go back to anything in a can. Remember: beets DON’T come in a can.
