I love asparagus, I could eat this for dinner alone and be perfectly satisfied. This recipe takes about 20 minutes total. Check it out.
Ingredients:
Serves 2 as a side, 1 as a meal
1 bunch of asparagus (I buy mine at the farmer’s market when I can, and they are usually 9 or 10 stalks medium to big)
4 2×2 inch sheets of dried seaweed paper broken into pieces (you can find these at Trader Joes)
2 tbsp butter
2 tbsp sesame oil
1 tbsp sesame seeds
1 tbsp soy sauce
1. Clean your asparagus and remove the last 2-3 inches of each stalk (save these and with them you can make the asparagus soup listed below).
2. Steam your asparagus on a steamer in simmering water for 3-5 minutes, until desired tenderness, I like mine with a little crunch left in them. I like using steamers because they leave more of the natural vitamins and minerals in the asparagus than boiling.
3. Chop butter into 4 sections and mix into asparagus in a bowl or on a plate while hot.
4. Dowse the asparagus in soy, sesame oil, and sesame seeds.
5. Mix them up together and place on a plate for serving. Sprinkle your seaweed pieces on top.
Remember, the goal of this blog is to become comfortable adding and subtracting ingredients based on your tastes and personal preferences. If you’re on a health kick, cut out the butter and see whether the concoction is wet enough for you. If it isn’t, add a little bit more sesame oil. Be brave.
