Salmon Marinade

A two ingredient salmon marinade!
Courtesy of my parent’s lovely friends, the Burkes, we acquired this quick and easy recipe while visiting them at their lovely beach home. The best part about it? The leftovers go great in tomorrow morning’s eggs! They were kind enough to let me share the recipe (thank you!).

Marinade ingredients:
1 cup soy sauce
1 cup honey

Mix up the two ingredients well in a bowl. Do this so that the honey is not just sitting on the bottom, you want it to blend into the soy. When it is well mixed, place the fish in a large pyrex dish and pour the marinade on top. Voila!

Yep. That easy. I used the above amounts when I made the fish in the photo. The piece I used weighed about 2.52 lbs and marinated for about 2 hours in the fridge. One hour in, I flipped the fish over to ensure that both sides could be evenly coated. I would suggest at least 2 hours of marinating, although I would say that you wouldn’t want to exceed 3. Soy sauce has a very potent flavor and you don’t want all of the salmon taste to be lost.

Like I said, half the fun of this recipe is making it for guests. Make enough so that there are leftovers, add them to your scrambled eggs the next morning and everyone will be impressed – I was!
