Peanut Butter Cup ‘n Swirl Ice Cream

Home made ice cream with a peanut butter swirl and Reese’s cups is pretty much heaven on earth.

It’s hard to go back to buying ice cream with 45 ingredients in it when you can make this yourself!

I use the vanilla ice cream recipe from cuisinart for the base of this peanut butter ice cream http://www.cuisinart.com/share/pdf/manuals/ice-20.pdf

Ingredients:

As you are running your ice cream maker, prepare your peanut butter swirl and Reese’s cups.

Ingredients:

1 Cup peanut butter

2 Tbsp granulated sugar

1/4 Cup powdered sugar or confectioner sugar

10 Reese’s cups

To make the peanut butter swirl:

1. Melt your peanut butter slowly in the microwave. I melt mine using 20 second intervals. You don’t want it to bubble or burn, you want it to become wet and soft. When it’s warm, add your sugar, both confectioners and granulated. Mix them up well, if you need to reheat, do it. You do not want to see granules of sugar. They should melt/dissolve. Remember use low heat and short intervals. Before you add it to the ice cream, you want to be sure it’s not hot or even warm, it should be room temperature.
2. Taste it! Want it sweeter? Just add sugar!

Once your ice cream is done being made, take it and quickly fold in the peanut butter swirl. It helps to use a rubber spatula for this. Your goal is to get it in there as quickly as possible without melting the ice cream.

Add broken up Reese’s cups to the vanilla ice cream after you have added the swirl! Let it sit in the freezer for at least 2 hours and then enjoy!!
