So much easier than it looks, this is a very healthy meal that promises to fill you up.
Ingredients:
1 Long 1 lb piece of salmon cut in two longways (Note: I’d recommend about 2 lbs for 4 people, so if you can get a 1 lb piece that’s at least 10- 12 inches in length you should be good. It needs to be long enough that you can wrap it around a small pile of spinach. The ends don’t have to overlap, but that’s the way you get your best shape. See below photo).
2 Bags of fresh spinach – if it’s not prewashed be sure to wash it, in fact you may wanna do that anyway
3 Cloves fresh garlic pressed using garlic press or diced
2 Tbsp olive oil
3 Tbsp butter
Salt and fresh ground pepper
Sauce
Juice from 1 lemon
3 Tbsp butter
You can add a bit of mustard or honey to this to spice it up. Play around with this sauce and add what you like!

Melt and drizzle on top
Preheat oven to 375 degrees.
1. Melt your butter and olive oil on low heat in a large frying pan.
2. Press your garlic press (or finely diced garlic) into the pan and cook slowly, do not brown your garlic. If you brown/burn it start over.
3. When it has cooked for 2-3 minutes it should be fragrant. When it is, begin cooking your spinach. Add half a bag at a time, or whatever your pan can take. You’ll cook it slowly and in batches. It will cook down.
4. Once you have all your spinach cooked, add salt an pepper to taste. Feel free to sprinkle a bit of juice (like from one sliver) on the spinach.
5. Remove your spinach from heat. Take your long piece of salmon and with a long wooden kabob stick, pierce the fish on both ends.
6. Scoop your cooked spinach into the middle of your salmon. Drizzle with the sauce above and bake in the oven for 10 minutes. Check part of your salmon by cutting it a bit, be sure it’s cooked before serving. If it’s not, add 2-5 minutes and check again.
7. Remove the stick carefully if you allowed for enough of the ends to overlap. Otherwise your guests can remove it themselves.
