Beets and Blue Cheese

I love beets. I lived my first 20 years avoiding them. But then one weekend I was in Brooklyn visiting my future sister-in-law and she suggested we check out this restaurant with bangin’ burgers. She went on to share that they were served topped with cheddar cheese, a fried egg, and a fresh thick slice of beet. Yes, that’s right, beet. Little did I know that this experience would change my life forever!

My love for beets has only grown since that fateful day. Sometimes, when you don’t like a food, you just need to try it in an unconventional way and it’ll change your whole opinion. Trust me.

Gruyere Soufflé

There is nothing more heavenly and delicious than a cheese soufflé. The French were so spot on about this dish (and a number of other delicious things). The great thing about soufflés is that they do not require lots of special ingredients. With a few extra steps and enough cheese in your fridge, you can impress your family and friends with this decadent meal.
