I love beets. I lived my first 20 years avoiding them. But then one weekend I was in Brooklyn visiting my future sister-in-law and she suggested we check out this restaurant with bangin’ burgers. She went on to share that they were served topped with cheddar cheese, a fried egg, and a fresh thick slice of beet. Yes, that’s right, beet. Little did I know that this experience would change my life forever!
My love for beets has only grown since that fateful day. Sometimes, when you don’t like a food, you just need to try it in an unconventional way and it’ll change your whole opinion. Trust me.
Ingredients:
7-9 Small pickled beets, diced or sliced (however you like ’em)
2-3 Oz of fresh blue cheese
2-3 Tbsp red or white onion (the amount is your call)
2 English cucumbers or seedless cucumbers sliced
Dressing:
1 Tbsp red wine vinegar
1 Tbsp olive oil
3-5 Pieces of fresh basil chopped
Sprinkle of salt and pepper
Mix together and enjoy! Yep, it’s that easy. It also keeps well and can be stored and kept for tomorrow’s dinner too.
