If it wasn’t easy, I wouldn’t be able to prepare it. We are in the middle of a kitchen remodel and let’s just say it’s been cramping my style (aka my creative outlet)!
On occasion, I’m able to whip something simple up. You’ve seen a variation of this recipe from me before, because nothing makes me happier than smoked fish for breakfast. My very sweet colleague, Callie, brought some in for me fresh from Lake Michigan. What a treat!
For the sake of others who are not smoked trout devotees, here is a simple way to spice things up and add a little extra flavor to an already delicious fish.
I prefer to eat fresh smoked trout, in other words, fish that doesn’t come from a can, but that’s not always possible. So, canned can work for this recipe just as well (yes, canned can!). Trader Joe’s has a very tasty option available.
For two!
1 can of Trader Joe’s smoked trout or fresh trout from a kind family member or friend
Scrambled eggs – 3 eggs used
2 Tbsp diced fresh dill
2 Tbsp diced fresh chives
7-8 Cherry tomatoes cut in half (I actually used grape tomatoes, but prefer cherry in general)
1 English muffin, cut in half, one half for each sandwich
1 Tbsp mayonaise
Salt and Pepper
Remove any bones from your fish and clean and dice your chives and dill.
Sauté half the tomatoes in some olive oil and salt and pepper till they become lightly fragrant. Throw in your eggs and scramble.
Cut and toast your English Muffin. Spread 1 Tbsp of mayo on each side.
Place your desired amount of smoked fish on the English Muffin, put your scrambled eggs on top. Sprinkle with chives and dill and enjoy.
