These are easy, which is good news for all of us. I try to serve a salad every night, so spicing it up is a must. Endives are delicious and painless to clean, I highly recommend incorporating them into your diet if you haven’t already. Remember the color rule – you want to eat a variety of colors for your daily fruits and veggies. 

Asparagus Soup

Ok, I know it might sound kinda gross to you, especially if you don’t like asparagus, but it is truly fantastic. And these three ingredients should hook you in – butter, salty virginia ham, and cream. Yes, I always lead with what is most likely to give you a heart attack and THEN mix in some veggies! My goal is that by the time you’re done eating this soup you become an asparagus lover!

Mid-Mexican Lamb Burgers

Combining some of my favorite cooking styles, this meal includes hints of Middle Eastern and Mexican flavors.The burger with tzatziki alone will remind you of Lebanese or Middle Eastern eats…Add the crunchy fresh salad and beans and you have your Mexican twist. Any part of this recipe can be switched around or substituted for your favorite sauces, flavors, and salads. In cooking, one should always be brave, so try changing and adding things to suit your palate!
