Chicken Wraps

Had some friends weigh in on Facebook to decide what I should make for dinner. In first place, this dinner was voted higher the week of Cinco de Mayo (no surprise, Americans will do anything to go Mexican)!  But, guilty as charged, I took a friend’s suggestion and turned our chicken wraps Latino!!

Ingredients for wraps:

1 tomato sliced
Half avocado sliced
1 Ear of corn (removed from core)
Lettuce leaves and/or wheat tortilla wraps
Lemons or lime wedges
Spicy mayo (2 tbsp mayo mixed with 1 tsp cayenne pepper and a squeeze of lemon) or
BBQ mayo (2 tbsp mayo mixed with 2 tsps BBQ sauce)
Salt and pepper
1 Fresh cut jalapeño
2 Chicken breasts sliced (directions below)
1 tbsp butter

Prepare all of your fresh ingredients (see above photo) and pan fry your chicken in one tbsp butter (or, grill your chicken). Be sure it is thoroughly cooked, as always, I suggest brining this white meat. Slice it and add it to your collection of ingredients listed above. Or if you’d like it to remain warm, cover it with tinfoil.

Ingredients for the beans:
1 tbsp butter
2 pieces bacon (if you have them, otherwise you can omit this)
1 can Goya black bean soup (if you’re only serving 2 people, i would suggest using 1/2 can)
1 can Goya black beans (if you’re only serving 2 people i would suggest using 1/2 can)Fry the bacon pieces and remove. When cooled, cut into small cubes. Add the black bean soup and black beans to a frying pan and cook down the liquid at low to medium heat. When they have lost most of their liquid, add the tbsp butter and the bacon and fry on medium heat for 2-4 minute, be sure to watch, don’t burn the house down! And try to retain some of the liquid.

 

 

 

 

 

 

 

 

 

Lighter/healthier variation – substitute your tortilla shell out for a large leaf of lettuce.

    Miss you too Amy! Thanks for checking out the blog. You have to go and enjoy some New Englad Clam Chowder at the Black Pearl in Newport, they are famous for it! BIG HUG!!
