Easy, fresh, salad. I love tomatoes, I eat this for dinner sometimes when Nick is traveling. And say whatever you want about today’s tomatoes, if you buy farmer’s market tomatoes, they are so delicious you don’t need anything but a sprinkle of salt and pepper in order to enjoy them.
Ingredients
2-3 tomatoes, depending on size and how many people you want to serve. I’d say this is a nice side salad for 2-3 people. But if you’re like me and you LOVE tomatoes, you may want to make this just for yourself.
1 package fresh buffalo mozzarella
4-6 slices thin red onion (you can omit this if you aren’t a raw onion fan)
8-10 leaves of basil – I grow some on my balcony
Olive oil
Balsamic reduction (you can find it in my endive salad recipe from March)
I like to put the top of one of the heirlooms in the middle, especially if you’re serving this to guests. That way they get an idea of how beautiful these tomatoes are.
Once arranged, I drizzle with olive oil and circle the plate with the balsamic reduction. If it’s just for me I always sprinkle with salt and pepper.
