Another easy salad – crisp and refreshing!
I typically serve this as a small side salad to dinner. I think it’s fun to eat out of bowls, so I’d recommend enjoying it that way. Personally, I think everything with a sauce should be eaten out of a bowl with a spoon, but that’s just me…
Ingredients:
1 jar hearts of palm – I usually use 4 long stalks – diced into 1/4 inch pieces (and yes, I get mine at TJ’s)
3 English cucumbers, these are the small (usually 4-5 inch) seedless ones – diced into 1/8 inch pieces
5-6 small pieces of cleaned basil – cleaned, rolled up, and cut/sliced
5-6 pieces of fresh mint – clean, rolled up, and cut/sliced
1 1/2 tbsp fresh chopped red onion
1 tbsp – EVOO
1 tbsp – rice wine vinegar
1 tbsp – fresh lemon juice
Salt and pepper
Mix together and enjoy – it’s that easy!
Now remember, add more or less of the different ingredients depending on your tastes. If you’re not sure about hearts of palm, use fewer stalks the first time and see how you like them.
