Traditional Tapas – Tortilla Espanola

My Spanish teacher in high school invited us over to her house where she cooked for us what she called the “real Spanish tapas.” Also known as the Tortilla Espanola or Spanish Omelet, we had it almost everyday when I traveled to Madrid. Since then, I make my own variations when I have eggs in the fridge and guests that need a hearty breakfast.

My teacher always said that the original tapas were made with eggs, potatoes, and onions. So whenever I have those three ingredients and I’m not sure what I want to eat, I thrown them together to make what she taught us – the real tapas, with some additions.

Ingredients:
1 Previously boiled/baked potato (with the skin still on if you like) chopped into small cubes
3 Tbsp coarsely chopped red onion
3-4 Eggs scrambled in a bowl
2 Pieces bacon, previously cooked, broken or chopped into small bits
1/2 Cup cheddar cheese
Olive oil or butter to coat the pan (about 2 tbsp)

Serves 2-3 people

-Using a small 8 or 9 inch non-stick pan melt or heat your butter/olive oil. Sauté your red onions in the pan over low heat. When the onions begin to caramelize throw in your potato pieces. Add more olive oil or butter if it is drying up.
-Now turn the heat to low and throw in your scrambled eggs and the bacon pieces. Add half of your cheese. Immediately cover the pan with a metal top. This is an important part of the recipe because you want things to cook as evenly as possible.  Leave it like this for 4 minutes and then check to be sure the eggs look like they are hardening.
-Take the pan off the fire and remove the tapas from the pan by placing a plate on top and flipping it onto the plate.

Typically I make a fresh tomato salsa/salad to accompany the heavy eggs. Nothing goes better with eggs than some fresh tomatoes.  All I do is cut my tomatoes up, add salt and pepper and maybe some fresh basil or herbs.

    Another beauty! When we lived in China one of favorite dishes was tomato and eggs, but I have not been able to recreate it in my kitchen. You are the best. Your food blog is like my "Fifty Shades of Grey" – I am drooling!

    Yum! Just got back from 8 days in Spain (Basque region) and had this at least five times….but yours looks even better with cheese, bacon, and a tomato salad 🙂

    Yay – thanks Amy and Dawn!! Dawn, aren't they delish?! I used to stay away from potatoes, but after being in Spain my love for potatoes with eggs changed entirely. Welcome home!
