Are you like me? If you are, this photo alone will get you to make these. I saw the idea posted online somewhere about a month ago and since then, I just couldn’t stop dreaming about them…
The good news is that they really aren’t hard to make. They are a bit tedious, as everything with a skewer is, but they are worth it. I served them at my house when I had a few of my lady friends over! Perfect for a dinner party or an evening of drinks with friends.
Ingredients:
Makes 12 skewers
1 Package tri-colored tortellini (you only need to cook about 16 tortellinis, follow the instructions on the package – if anything, cook them for less time so that they are al dente). Pick a variety of colors. Cook a few extra just in case they fall apart or fall off the skewer.
1 Package of small mozzarella balls (it should have at least 12 pieces)
12 Cherry tomatoes
12 Mixed olives
1 Package of medium size pieces of Genoa salami (again, you want at least 12 pieces, are you seeing a pattern yet?) you can also go to your deli counter and get this custom ordered.
12 bamboo skewers
I recommend drizzling a salad type dressing on top.
Not sure what to use? Make my balsamic reduction. You can use any vinaigrette, I default to the balsamic reduction because I know what’s in it (only 2 ingredients). I’m not a big fan of the bottled salad dressing unless they have all identifiable ingredients.

Up to you how you want to order things, I tried to put the tortellini next to something full of flavor – the salami, but there’s no rule here. Putting them next to the olive or tomato would be just as good.
Don’t forget to drizzle a sauce or salad dressing on top. Something to give a little tang to your antipasto!
Another great thing about these is that they have a little something for everyone and they are an attractive snack if you want to serve drinks and not dinner.

How about a piece of basil between the tomato and mozzarella ball? Eco bono! Antipasto, primo and secondo platti all on one stick! Now that we have saved on dinner, what about docle? Tiramisu on spoons.

What a colorful presentation! Although I like Genoa salami I would prefer prosciutto. A touch of basil sounds good as does the balsamic reduction. What about skewered prosciutto, asparagus pcs and tortellini with a hollandaise dipping sauce?
