Kitchen Remodel Phase I

Working in a kitchen that you are about to take apart has its restrictions. With no microwave or dishwasher, and nothing in the cabinets, I have done my best to prepare hot meals the last few months. But, there’s hope on the horizon…The kitchen demo has been completed and the remodeling work has begun!

Goat Cheese Truffle Pasta

IMG_9855This is the perfect example of a, “What’s in your pantry?” dinner. And don’t be fooled, just because I write a cooking blog doesn’t mean that whip-it-up meals don’t take place on a regular basis. This is a pretty typical situation for me. After coming home from work, I survey what we have between our frigde and our pantry and I make dinner. Fortunately, my husband fell in love with this pasta dish. I will definitely be making it again since it was such a success – and so easy. The more of these kinds of meals you make, the better you become at knowing what ingredients will mesh well together.

Portland

I was fortunate enough to visit the city of Portland during the birth of spring. What a cool city in such a beautiful state – complete with miles of coastline, lush green steep hills, snow peaked mountains, and saturated vegetation. Everything was in bloom, and between the rains the clouds would allow the sun to sparkle thru, just enough to keep everything spring-green.

In addition to the beautiful landscape, there’s plenty to do in this lovely state. Since I was visiting Portland for work, I didn’t have much free time to do it. With days beginning and ending in darkness, I didn’t get to see many sights or go hiking, but I did get to drink some local wine and enjoy some good food.

Beets and Blue Cheese

I love beets. I lived my first 20 years avoiding them. But then one weekend I was in Brooklyn visiting my future sister-in-law and she suggested we check out this restaurant with bangin’ burgers. She went on to share that they were served topped with cheddar cheese, a fried egg, and a fresh thick slice of beet. Yes, that’s right, beet. Little did I know that this experience would change my life forever!

My love for beets has only grown since that fateful day. Sometimes, when you don’t like a food, you just need to try it in an unconventional way and it’ll change your whole opinion. Trust me.
